  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/8 tsp nutmeg

  • 1/2 tsp pumpkin pie spice

  • 3 tbsp Allulose

  • 1/2 tsp salt

  • 1/2 tsp citric acid

  • 1/2 cup heavy cream

  • 1/2 cup whole milk

  • 2 large eggs

  • 2 tbsp sour cream

  • Optional toppings: fresh blueberries, whipped cream, sugar-free syrup

Instructions

  1. Preheat the Waffle Maker: Start by preheating and lightly greasing your waffle maker to ensure it’s hot and ready.

  2. Blend the Dry Ingredients: In a blender, add almond flour, cinnamon, baking powder, baking soda, nutmeg, pumpkin pie spice, Allulose, salt, and citric acid. Pulse until well blended.

  3. Combine with Wet Ingredients: To the dry mixture, add mozzarella cheese, eggs, vanilla extract, heavy cream, whole milk, and sour cream. Pulse until all ingredients are combined, then blend continuously for about 30 seconds to create a smooth batter.

  4. Cook the Chaffles: Pour about 3/4 cup of batter into the waffle maker, spreading it evenly. Wait 10 seconds then close the lid and cook for 3-4 minutes, or until steam stops escaping. Gently remove the chaffle with a silicone spatula. Repeat with remaining batter.

  5. Serve: Top the chaffles with fresh blueberries, whipped cream, and a drizzle of sugar-free syrup for a delicious and visually appealing dish.
