  • 1 cup almond flour

  • 1 tbsp chili pepper flakes

  • 1/2 tsp Dano’s chipotle seasoning

  • 1/2 tsp salt

  • 1/2 tsp Italian seasonings

  • 1 lb chicken tenderloins

  • 3 large eggs

Instructions

  1. Blend the Dry Ingredients: Add Parmesan cheese, almond flour, chili pepper flakes, chipotle seasoning, salt, and Italian seasonings to a blender. Pulse until well combined, creating a smooth, seasoned breading mixture.

  2. Prep the Chicken: Rinse and thoroughly dry the chicken tenderloins. Place them in a Ziploc bag.

  3. Create an Egg Wash: In a bowl, whisk the eggs until smooth. Pour the egg mixture into the bag with the chicken, ensuring each tenderloin is coated.

  4. Coat the Chicken: Transfer the breading mixture to a separate Ziploc bag or spread onto a plate. Press each egg-coated chicken tenderloin into the dry mix, ensuring an even coating.

  5. Fry the Chicken: Heat a skillet with about 1/4 inch of olive oil over medium heat. Place the tenderloins in the pan, cooking each side for about 2-3 minutes or until golden brown.
